Corn, white beans, tomatoes, chili peppers, cream, and of course, chicken, make this a one-of-a-kind chunky chicken soup.
In a large soup pot cook onions in hot butter until tender. Stir in corn, beans, tomatoes, and chili peppers. Stir in broth and cream. Bring to a boil; stir in cumin, chili powder, oregano, and cayenne pepper. Stir in chicken. Simmer, covered, for 30 minutes, stirring often. Season to taste with salt and pepper. If desired, simmer, uncovered, for 30 minutes to thicken.
