This rich vegetable dish combines corn--whole kernel and cream-style--with corn muffin mix, plus an egg, sour cream and melted butter.
Preheat oven to 350 degrees. Stir together wet ingredients in a medium bowl. Add muffin mix and stir until blended. Batter will be lumpy. Pour into a 9x9" greased baking pan. Bake about 45 minutes. Top will be slightly golden.
