This meatloaf uses ground turkey, egg white, and rolled oats for a healthy version. It also has tomato, onion and garlic, and may be garnished with bell pepper rings.
Mix ground turkey, egg white, oats, tomato, minced garlic and onion, 1/2 cup ketchup, the water, and hot sauce until well combined. (Add salt as desired.) Place in loaf pan, or use a large baking pan and shape into loaf. Bake @ 350 for 35 minutes. Top with additional ketchup and sliced bell pepper rings; bake for an additional 10-15 minutes or until meat is done.
Number of Servings: 6-8 hearty slices
Notes from the Cook: May use dried garlic and any type of small tomato; serve with mashed potatoes, vegetable, and salad. Great for next-day leftovers, cold or warmed.
