This easy rice pudding is full of plumped raisins and is spiced with cinnamon.
1. Combine rice and water in medium saucepan. Bring to a boil. 2. Reduce heat, cover and simmer 20 minutes, or until rice is very tender and water is absorbed. Allow to cool. 3. Meanwhile, place raisins in a small bowl and add hot water to cover. Let soak to soften for 10 minutes. Drain water. 4. Stir yogurt, cinnamon, sweetener and raisins together. Add cooled rice. Pour into individual serving dishes and top with non-dairy topping, if desired. Serve immediately or cover and chill until serving time.
