These browned zucchini slices can be served as an appetizer or as a side dish. Serve with purchased spaghetti sauce as a dipper, if you like.
Mix dry ingredients in a large shallow dish. In another shallow dish, beat eggs and milk together until combined. Dip zucchini in egg mixture and roll in dry mixture to coat. In a large skillet heat olive oil over medium heat. Add zucchini slices in batches, and cook until golden brown, turning once.
Number of Servings: Approx. 80 slices
Notes from the Cook: I never like zuchinni other then in chocolate cake and bread. We planted zucchini in our garden this summer and my husband thought I should make those sand dollars they have at Red Lobster. I did not know the recipe, so we made this one up!! They were wonderful!!!! Halve the recipe if you don't want to make quite so many.
