Large portabello mushrooms are stemmed, grilled, and filled with hummus and feta cheese. They may be served on kaiser rolls, if desired.
Remove and discard the tough stems of the mushrooms. Add salt and pepper to both sides of mushroom. Grill, dome (rounded) side up, for 5-8 minutes over medium flame. Flip over and stuff the hole where the stem was with hummus; cook for 4-5 more minutes. Top with feta and allow it to melt. Serve alone or on large Kaiser Rolls, toasted, with a drizzle of extra virgin olive oil.
