These pancakes are quickly mixed in the blender using flour, milk, baking powder, egg, vanilla, a little oil and a generous amount of sugar. The amount of oil is less and the amount of sugar is greater than in a usual recipe.
Place milk, sugar, oil, and vanilla in the blender. Add flour and baking powder. Blend until smooth. Pour batter onto hot griddle or skillet, using around 1/4 cup for each pancake. Brown on both sides; serve hot.
