A versatile sauce made with tahini that has the cool flavor of cilantro and a little sweetness from the honey.

Wash the cilantro and parsley, removing the stems. Process all ingredients, except the tahini, in a blender or food processor until chopped fine. Empty into a bowl and add the tahini, stirring vigorously until the mixture thickens. Keep refrigerated. Serve as a salad dressing, over steamed vegetables, or as a dip. This sauce is also delicious over brown rice.
