Try this no-fat apple and spice muffin. Fresh apples and apple juice concentrate add flavor and moistness, while chopped walnuts add a crunch.

Preheat the oven to 425*. Mix the oat bran, cinnamon and baking powder in a bowl. In a large bowl, mix milk, juice concentrate, egg whites and corn syrup. Blend in dry ingredients. Add chopped apple and walnuts. Line a muffin tin with paper muffin cups and fill with batter. Oat bran batter rises very little, so you can fill the cups fuller than if using wheat flour. Bake for 17 minutes.
