Peanut butter adds a nutty flavor to this canned chicken with rice soup fix-up. Black beans and sweet potatoes add interesting flavor and texture.
Spray pot with cooking spray. Dice sweet potatoes and brown on medium. Add garlic and red onion and pepper and cook for 2-3 minutes until toasty. Add soup, broth, salsa and black beans. Simmer for 30 minutes. Add chicken and heat through. Just before serving, whisk in peanut butter. Enjoy!

Notes from the Cook: The ingredients sound strange, but this is SUCH delicious soup! I am not even a big fan of sweet potatoes, but this is wonderful!
