This chocolate filling is thickened with cornstarch, flour, and eggs. It also contains cocoa powder, vanilla and butter for flavor.
Mix together in saucepan the sugar, cornstarch, flour, salt and cocoa powder; stir in milk. Cook and stir until mixture thickens and bubbles. Cook 1 minute more. Pour some of the hot mixture into a bowl with the 3 beaten eggs. Then pour back into pan and cook gently for 1 minute. Remove from heat and add 1 1/2 tsp. vanilla and 1 Tblsp. butter. Pour into baked pie crust; top with meringue and brown in oven.
