Heavy whipping cream is sweetened with powdered sugar and flavored with vanilla, then whipped just to stiff peaks, to use as a topping for desserts such as pumpkin pie.
Begin whipping the cream with an electric mixer at medium to high speed (or use a wire whisk if you have the endurance). Slowly and carefully add the sugar. Drizzle in the vanilla. Whip just until firm peaks form. Serve immediately or cover and refrigerate up to 2 hours. (If using a stand-type mixer, DO NOT LEAVE UNATTENDED while beating! You can have Chantilly BUTTER in a matter of seconds.)
