Fish baked in individual servings with rice pilaf and lemon that are easy to prepare.

Preheat oven to 450 F or grill to medium-high. Prepare pilaf mix following package directions. Center one cod fillet on each sheet of Heavy Duty Aluminum Foil. Spray with nonstick cooking spray. Sprinkle with lemon and herb seasoning. Add lemon peel and juice to cooked pilaf; spoon pilaf beside cod. Sprinkle red pepper over top. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets. Bake 12 to 14 minutes on a cookie sheet in oven OR Grill 10 to 12 minutes in covered grill. Sprinkle with almonds before serving.
